The Sous Chef will manage and assist in daily production of all menu items. Instruct and oversee a team of line and prep cooks to ensure proper opening, closing and preparation procedures are adhered to. Work with the chefs to develop and properly execute a seasonal menu, maintain recipes and systems, and control costs. Perform detailed quality checks each shift to confirm food quality and consistency guidelines are met. Oversee private dining menu production and execution. Assist with inventory and ordering. Ensure safety, sanitation, and cleanliness standards are upheld and maintained. Confirm proper labeling, storage (FIFO), and temping methods are followed.
